
How American Pasteurization Company pioneered integrated HPP and food manufacturing in the United States
In 2004, American Pasteurization Company (APC) was founded to help food producers enhance food safety without compromising freshness or quality. The food industry's existing preservation methods—sustained heat, synthetic additives, chemical preservatives—were mostly solving the safety problem while creating a quality problem.
Determined to find a better way to protect people and products, the founders of APC—veterans of the food manufacturing industry—turned to a novel solution: high-pressure pasteurization—a non-thermal food preservation method that delivers safe, fresh food without heat, chemicals, or synthetic preservatives.
HPP uses cold water pressure rather than heat to inactivate pathogens including Listeria, E. coli, and Salmonella—without degrading the taste, texture, color, or nutritional profile of the product. The founders saw the technology as transformational and built a business around it.
The original mission has not changed: help food and beverage brands bring products to market that are as safe as they are fresh, without the compromises that traditional preservation methods require.
APC began with a single HPP system in Milwaukee, Wisconsin—and the distinction of being the first company in the United States to offer HPP tolling services.
APC rapidly expanded its HPP capacity in the years that followed, added premium food manufacturing to its capabilities, opened a second facility on the West Coast to serve brands distributing nationally, and built the Innovation Center in Milwaukee—a dedicated R&D kitchen and packaging validation facility co-located with operating HPP systems. Each step extended what APC could offer a client without requiring them to work with additional partners.
Today APC operates nine HPP systems across two SQF-certified facilities, serving brands that range from single-SKU startups running their first pilot to national CPG companies managing millions of pounds annually.
