Founded in 2004, American Pasteurization Company grew from a deep commitment to food safety and a belief that food could be protected from contamination without sacrificing the freshness, flavor, texture, and nutritional qualities people value.

APC’s founders were experienced food-manufacturing professionals who had seen the devastating consequences of foodborne illness. They turned to a then-new technology: high-pressure processing, a non-thermal pasteurization method that uses pressure rather than sustained heat to inactivate harmful pathogens.

The promise was larger than food safety alone. HPP made it possible to produce safer refrigerated foods that remained fresh-tasting and less processed, often with fewer synthetic preservatives. That combination became APC’s original purpose and remains central to the business today.

From One HPP Machine to Two Production Facilities

APC began with one small HPP machine in Milwaukee, Wisconsin. Over the years, investment in HPP capacity, food-processing knowledge, and research and development allowed the company to expand significantly.

Today, APC operates nine HPP machines across production facilities in Milwaukee and Sacramento. Our capabilities have also grown to include co-manufacturing for premium and specialty food products, post-HPP packaging and assembly, product-development support, and logistics coordination.

For customers manufacturing with APC, those capabilities connect directly: a product can move from production to HPP to final pack-off without leaving a controlled facility. That integration reduces the handling, temperature exposure, freight, and scheduling risk created when each step is managed by a different provider.

Our Team

Many of the people who run APC’s operations have been with the company for years, and some have been here since the beginning. Their experience is not abstract. It comes from processing thousands of SKUs and working through the formulation, packaging, validation, equipment, production, and cold-chain problems that arise in commercial HPP.

That continuity gives customers access to a team that recognizes common failure modes early, understands how decisions made during development affect production, and knows when a product requires a different formulation, package, process, or operating plan.

We are proud of what APC has built: a company with deep HPP knowledge, experienced people, two production facilities, and the ability to support customers from early product development through commercial manufacturing and distribution.

Our purpose remains straightforward: help customers deliver food that is safer, fresher, and better protected throughout its refrigerated shelf life.
